At the moment, it has two vineyards with a total of 150 hectares of which only 85 are planted in trellis and vine arbour. All the production comes from these vineyards. The cultivated varieties are Malbec, Syrah, Tempranillo, Merlot, Cabernet Sauvignon, Chardonnay and Torrontés.
Both canopy systems are being controlled to obtain an average yield to ensure the quality of the desired wines with an optimal concentration of aromas and colour, with a balanced relation between sugar and acidity and a good structure. To all this technological effort, there also contribute the natural factors such as altitude, 1,100 metres above the see level, frank-sandy soils, the remarkable temperature amplitude and the winter rains.
There are modern machinery and equipment for the winemaking at all stages of the production process. From stainless steel tanks and refrigeration equipment, the old concrete vats were transformed into storage areas for bottles and French and American oak barrels. The latter are used for aging wines from 9 to 12 months.
An annual production that does not exceed 80,000 bottles makes it possible to maintain the control over the superior quality that is the goal to achieve in each bottle.
