In 1998, Bertrand Cuvelier took the initiative to accompany Michael Rolland in his large Argentine project that became the “Clos de Los Siete” group. Three years later, Jean -Guy Cuvelier decided to join his cousin Bertrand who had the common goal of building a winery and so the project was on.
The vineyard extends over 55 hectares today, still missing ten acres planted. The harvest is done manually with impeccable logistics and small boxes of 12 kg to ensure the integrity of the grapes and grains. Most strains is the Malbec , Cabernet Sauvignon accompanied, Merlot , Syrah and Petit Verdot , giving rise to ” assemblages ” wines that contribute to the wines of Clos de los Siete.
The winery was built prioritizing the quality of the wines . Its structure is composed of three ships. The ship is equipped with tank technology for the reception, selection of clusters and grains grapes to make wine . Loading the tanks by gravity .
Fermentation and storage are carried out in stainless steel small volume, with automatic temperature control, to ferment each vineyard plot individually and under strict control.
The cask has two distinct areas , one for the malolactic fermentation process, and the second for the conservation and aging of wines. It was designed to store a total of 1200 oak barrels of 225 liters in just two height levels .
Finally on the ship bottles fractionation, maturation , clothing and shipment of products to different markets is performed. All under strict temperature control , with modern facilities and equipment.
