Vineyards and Winery Mendel arises from the union of Roberto de la Mota, one of the most respected and experienced argentinean winemakers with an argentinean family committed to producing wines of the highest quality. To do the best, lots of the old vineyards are selected strictly respecting every detail of the winemaking process, from the choice of plots and harvesting grapes to fermentation in small tanks to aging in the finest French oak.
The soils are of alluvial origin, formed with materials from the Andes. Very rocky, high permeability, low in nitrogen and organic matter, rich in potassium, are soils that give rise to low vigor vineyards medium, but which allow high levels of concentration and intensity in their grapes.
Under an artisanal vocation both harvest and the wine grapes are manually harvested in the early hours of the morning and brought to the winery in small containers of 18-20 kg.
After a manual selection of clusters and berries, grapes are placed in small tanks by gravity for maceration. This operation lasts between 3 and 5 weeks and is performed manually ” piegage manuel ” plunging the skins in the liquid very gently ensuring robust but selective extraction of aromas, tannins and polyphenols in general, all elements that give volume and structure of high body quality.
